Japanese restaurant - donburi



 
It is a one-plate (bowl) food where you eat a main dish on rice. Some Donburi is being enjoyed and accepted as fast food in Japan.

There is an endless number of Donburi existing because you can even create your own Donburi by putting your favorite main dish on rice. The most common Donburi is as follows: Tendon with Tempura, Tekkadon with raw Tuna, Gyuudon with salty-sweet beef, Oyakodon with chicken and egg, Kaisendon with a variety of fresh seafood, Katsudon with deep fried pork mixed with egg. There are specialty restaurants serving only Donburi in Japan.

It is handling money without detailed calculations. This originated from the craftspeople taking or putting money back into their big pockets called Donburi in their special aprons a long time ago. This Donburi and the bowl Donburi use the same Chinese character, but there is no correlation in meaning. ◆ Here is a list of other Donburi variations.

  • Enoshimadon: Diced turban shell meat mixed with egg.
  • Kattedon: Originated in Kushiro, Hokkaido. You get cooked white rice first in the fish market, and then select your favorite seafood to put on your rice while walking through the stores in the market.
  • Kamakuradon: Deep fried shrimp mixed with egg.
  • Gyuutorodon: Raw ground beef served with soy-sauce-based sauce and condiments such as green onion, seaweed and green horseradish paste.
  • Sakenooyakodon:Salmon flakes and salmon roes.
  • Tanindon: Any meat except chicken mixed with egg.

Curry


Curry is the dish that various ingredients such as vegetables and meat are seasoned with multiple spices. It was introduced to Japan via England and arranged into Curry Rice in Japan, and its popularity is high enough to be called a national food along with Ramen. Special programs on Curry have been on-air and books about Curry have been published. In addition, Curry-themed music CDs, cartoons and picture books are on the market.

The military of the Empire of Japan once introduced Curry as a military dish and served Curry for lunch every Saturday, later changed to every Friday. This was aimed to make the soldiers keep track of the days of the week as they spent long hours at sea. Curry was also considered as a nutritious food.

The main ingredients for Curry are onions, carrots, and potatoes. You may add any meat as you like.
◎ Curry recipe
① Put some oil in the pan and saute diced onions until brown. Do not burn them.
② Toss in some meat and briefly cook, and add carrots and potatoes.
③ Add water after all the ingredients are well mixed.
④ Cook until the potatoes become tender and add instant curry blocks.
⑤ Cook for an extra few minutes after the curry blocks are completely melted.
⑥ Serve it on warm rice.

Chinese style



 
Chinese food is the cuisine arranged accordingly based on original Chinese food overseas. Compared to Japanese or other western foods, they are cooked on a higher heat and use a lot more oil. The use of raw vegetables and cold dishes are rare. Freshwater fish is frequently used in preparing Chinese food. Ramen, Tenshinhan, Ma Po Tofu, and Dumplings have developed their own originalities in Japan.

Chinese dishes are categorized into 4 major varieties depending on their geographical background.
    • North (Beijing dishes): They consist of a strong flavor and are high in sodium. Their appearances are lavish as they originated from the Imperial Cuisine. They use more flour and meat rather than rice and fish.
      【Typical dishes】Peking duck, Dumplings served in soup, Noodles with minced pork sauce.
    • East (Shanghai dishes): They are characterized by a strong flavor with sweetness. Shanghai is rich in farm products due to its mild climate, and is known as a production center for rice.
      【Typical dishes】 Shanghai crab, Steamed dumplings, Diced broiled pork.
    • South (Cantonese dishes): They are characterized by a light flavor to enhance the tastes of ingredients. This location is rich in sea food due to its mild climate and many coastal areas.
      【Typical dishes】Shark fin, Dim Sum, Sweet sour pork.
  • West (Szechuan dishes): They contain a spicy flavor. Due to its cold climate, spicy dishes have been prepared to cause sweating and improve appetite. Chinese hot sauce is frequently used.

Cafe and bakery



There are so many varieties from sweet bread to sandwich-styled bread. The typical sweet bread is Anpan filled with red bean paste, Jamupan with strawberry jam, Creampan with custard cream, and melon-shaped Meronpan with no melon in it. The sandwich-styled bread is Korokkepan with croquette and Kareepan with curry sauce. Bread called Gopan made with rice powder has made a debut as well.

Wagashi is a confectionary made through a traditional Japanese process. Taiyaki, Oobanyaki, Manjyu, and Dorayaki are stuffed with red bean paste called Anko, and are available all year round. Wagashi is seasonally served with different designs, thus Wagashi making often requires artistic skills. You can enjoy Wagashi visually as well.
